Bring to the boil and simmer until the onions and fruit are soft (about 30 minutes).
Stir in the sugar and bring back to the boil. Reduce heat and simmer until thick enough to see the bottom of the pan when a wooden spoon is pulled through it. This could take 10 – 15 minutes.
When thick, put into warm sterilised jars and seal. It’s probably best left in a dark place before eating, but it is delicious straightaway.
It is so delicious that if you have enough figs it is worth making a double quantity. It will soon disappear.
